Choosing a Good Egg

Eggs are a staple of household and food industry. Egg needs a much larger current supplied by the farmer-rancher who specialized in producing eggs, and consumers only buy them in shops or at markets.

We must be careful in choosing eggs before consumption because there is the possibility of eggs being sold have been damaged or deteriorated, this can be caused by too long storage or transport processes.

A good egg characteristics can be seen from the outside, among others:

Egg shape should be normal, that is oval,
Eggs in a clean condition,
Average egg shells,
Fill the egg does not sound if shaken,
Eggs are not deformed or cracked. To determine the condition of the eggs cracked or not, by observing the presence or absence of white lines on the surface of the egg shell. If there are white lines, then it indicates that the egg is cracked.

To find out more about the quality of freshness of eggs or egg, can be done in ways as follows:

1. Telescoped eggs

Can use sunlight or incandescent lamps. To telescoped egg, then the tip of a larger eggs attached to the lamp, because the eggs of air cavities located in that section. At the time the eggs will look telescoped part of: air cavity eggs, egg whites and egg yolks.

Eggs are still fresh / new look:

air cavity (there at the end of the egg) is small, the smaller the better.
smooth eggshell, eggshell pores smaller.
there are no stains on the contents of the egg.
egg yolk in the middle, not free to move.

The more air in the cavity formed, indicating that the longer the egg ages. This is because the process of evaporation, so the longer the age of the eggs then the more evaporation so that more air voids in / on the increase.

2. Submerge the eggs in water

Another way to determine the freshness or quality of eggs is to soak the egg, namely:

Provide a transparent glass with a glass base diameter is rather wide. Fill the glass with enough water.
Put eggs into it, observe the position of the egg after arriving at the base.
When egg laying perfect position at the bottom of the glass (sink), then it indicates that the egg is still very new age.
When most of the eggs stand (float), shows the egg is rather long (estimated age of one week.
If the egg stands upright (float), shows the age old eggs (between 2-3 weeks).

3. Break an egg

Age of eggs can also be seen if we break an egg on a plate, then observe:

Eggs are still new, when solved, the white part looks strong.
Eggs by the age of one week, the whites more dilated.
Eggs aged 2-3 weeks of the whites are much more broadly, because the older the age of the egg the more dilute.
